Description
The annual statistics on total meat production illustrate the slaughter volumes (number of carcasses and weight in kilograms) of cattle, swine and sheep (both at slaughterhouses and on farms) and poultry and horses (at slaughterhouses only). The statistics are based on information contained in the Farm Survey and the Bovine Register, and on data collected monthly from slaughterhouses.
Content
The statistics contain the number of production animals slaughtered at slaughterhouses and on farms in thousands of carcasses (No. 1,000) and their weight in millions of kilos (MIL KG). A slaughterhouse’s meat production volume includes slaughter animals that the slaughterhouse has produced itself, animals purchased from other producers, and producer returns. Meat production volumes do not include discarded carcasses or discarded portions of carcasses.

Data collection and sources
Data for the slaughterhouse statistics is collected monthly from slaughterhouses. The majority of businesses in the slaughter industry fall within the scope of Tike’s data collection. Those that fall outside are mainly businesses that carry out small-scale on-farm slaughter.
On-farm slaughter statistics are drawn up using a sample of the data collected for the Farm Survey, which is conducted in December via telephone interview. Data is collected on meat output and the number of animals slaughtered on the farm during the past year. Slaughter volumes for cattle (both at slaughterhouses and on farms) are taken from the Bovine Register.
Update frequency
Statistics are drawn up annually.
Preparation and publication schedule
The data for the previous year is available in early March of the following year.
